Having frozen fillets in the freezer means you can whip up a healthy meal in short notice. Here’s a couple of ideas to get you going…
Baked Lemon Salmon
A quick dish which goes well with roasted vegetable couscous . Pop a couple extra fillets in the oven to enjoy the ‘Bake and Flake’ recipes below…
What you need
- Norwegian skin-on boneless salmon (one fillet per person)
- Olive oil for brushing
- Fresh lemon
- Fresh thyme
What to do
- Defrost the fillets overnight
- Pre-heat the oven to 200 degrees (fan)
- Lightly brush salmon with olive oil
- Season with salt, pepper, thyme and fresh lemon juice
- Place on greaseproof paper and bake for 15-16 minutes
TOP TIP: If you don’t have time to thaw the fillets, simply rinse under cold water quickly to remove excess ice. Increase cooking time to around five minutes per ounce. Put extra, un-eaten fillets aside for tomorrow’s recipes.
Flaked Spicy Salmon Tortillas
Make salmon fun for the kids with this quick and simple lunch idea – flake cooked salmon (from the night before) into a warm wrap.
Top with red onion, tomato, cucumber and fresh coriander. Give your wrap an extra kick with a drizzle of Chill Olive Oil
Simple Salmon Tagliatelle
Not every pasta dish needs heaps of cream – flake cooked salmon into warm tagliatelle with a sprinkle of fresh parmesan.
Add a drizzle of oil and a little fresh dill, for a light, summery dinner.
Swap the tagliatelle for penne for an easy lunchbox or picnic option. Add a dollop of pesto to keep the pasta moist and tasty.
