Try this Smokey Ratatouille and Baked Trout Recipe

This Mediterranean medley with grilled fish makes the perfect mid-week meal.

Even better: trout, aubergine, lemon and cherry tomatoes are all on offer at JJ Foodservice until August 25th.

What you need

  • 2 aubergines, cubed
  • 2 courgettes, chopped
  • 1 red pepper, deseeded and chopped
  • 200g cherry tomatoes, sliced
  • 2 garlic cloves, crushed and chopped
  • 1 red onion, diced
  • 2 tbsp olive oil
  • 1 tsp mixed herbs
  • 4 x frozen trout fillets

What to do: Ratatouille

  • Heat two tbsp of olive oil in a pan
  • Fry the aubergine and courgette on a medium heat, until golden
  • Add the onion and garlic, stir for one minute. Season well
  • Add tomatoes and red pepper, stir until softened
  • Break up the tomatoes with the back of a spoon
  • Add the lemon, mixed herbs and an extra splash of olive oil
  • Reduce heat and simmer until vegetables are fully cooked through

TOP TIP: For a smokey kick, add a teaspoon of paprika while frying the veg

What to do: Trout 

  • Preheat the oven to gas mark 180
  • Place trout on tray and season well
  • Add squeeze of lemon and drizzle of olive oil
  • Bake for 20 mins and serve with the ratatouille
